Isabelle's Vanilla Mango Mousse

10-15 white fresh almonds and/or cashew nuts
2 ripe mangoes
1 vanilla pod
1 TBS honey
Mix the chilled mangoes with the vanilla pod seeds; add just a little bit of water. Roughly grind the almonds and the cashew nuts. Slightly roast them in a skillet until golden, add the honey and stir with wooden spoon for about 30 seconds. Remove from the stove.
Pour the mango mousse in the verrines or elegant glass wear and add the nuts mixture as a topping. Place in the refrigerator before serving.
The choice of an elegant glass wear will give this light and colorful dessert a festive look.
